Tri Tip Sliders
Ingredients
2lb tri tip
2 packs of Hawaiian rolls
1 onion
cheese slices
jack
cheddar
pickled jalapeños
4 T butter
1 head garlic
smoky aoli
1 C mayo
1 t smoked paprika
1 t lemon juice
1/2 chipotle adobo
salt to taste
Instructions
trim the tri tip
apply bbq rub with a mustard or oil binder
smoke at 225 for 1-1.5 hr until it hits 125 F
garlic butter
set your butter out in a bowl so its room temp
cut the top of the garlic head off, wrap in foil
drizzle with olive oil, cover up with the foil
throw in the smoker with the meat
when the meat is at temp, char the outsides on grill, let it rest
squeeze your garlic into the bowl of butter, combine well
in a cast iron, grill the onions down til soft and a little carmelized
chop up the pickled jalepenos and set aside
pre heat oven to 400
cut the hawaiian rolls in half
build on a cookie sheet
bottom buns
aoli
jack cheese
tri tip
onions
pickled jalepenos
cheddar cheese
top buns
brush with garlic butter
into the oven for 5-10m just watch for browning and melted cheese
